Prawn cocktail ...boost!

Following on the thread , What starter for xmas dinner ? Reading the thread many are having the standard Prawn Cocktail , Good choice , can be prepared earlier and not expensive .
But how can I improve on the dish?

    do mini versions on a lettuce leaf so they are bite size :) more like canapy than a "course"

  • I always put a sprinkle of paprika on the top makes it look lovely, maybe add some avacado or some other fish-crab or crayfish tails? x

    Mix the rose marie sauce with mayo for a thicker sauce and do a mixture of small and larger pawns.

    Use fancy lettuce like lollo rosso to give it a different base colour? Do you really need to jazz it up- I love it whatever way it comes!

    Ok , may well try the paprika , BUT will go more with the presentation.
    Glass bowls and a Tiger prawn standing on the side.
  • I add a small dash of Brandy and a pinch of cayenne pepper for a bit of a kick.

    Prawn Cocktail (4 servings)

    500 g Large Prawns

    Tiger Prawns (Garnish)

    Lemon or Cucumber Slices (As a garnish, cut slice fromcentre to one edge, twist open edges in opposite directions).

    4 Tablespoons Mayonnaise

    2 Tablespoons Double Cream

    2 Teaspoons Tomato Ketchup

    Dash Worcestershire Sauce

    1 Teaspoon Lemon Juice

    Iceberg Lettuce (Shredded)

    Blend 4 Tbls Mayonnaise with 2 Tbls Double Cream.
    Add 2 Tsps Tomato Sauce & a dash of Worcestershire Sauce (I use double this quantity for a large bag of prawns).
    Rinse the Prawns & fold 2/3 into the mixture with 1 Tsp of Lemon Juice. (This mixture can be done in advance a few hours earlier,and helps the flavouring of the sauce. The lettuce can also be shredded inadvance to save time, cover both & leave in the fridge).

    Just prior to serving, place the shredded lettuce into the individual dishes, add the prawn mixture, top with the remaining 1/3 Prawns.Top the dish with either a twisted slice of lemon or cucumber, Hang three large Tiger Prawns around the outside of the dish.

    Thin slices of Smoked Salmon can also be added for a different taste & Texture.
    Everything has its beauty but not everyone sees it.

    Some nice ideas ;)

    ps dont waste money buying Marie rose sauce... it's basically just mayo + tom sauce anyway! I've heard of people adding a dash of vodka to it - gives it a kick but keeps the colour pure.

    Brandy and now Vodka , great ideas but looking at the guests and there ages might give that a miss. Got the few Tiger Prawns this morning .

    Now do I go for the cayenne pepper or the paprika ?

    Lemon or Cucumber Slices ......... Lemon .
