Homemade Irish Cream help

Hello. I'm not sure if this is the right forum to post this on... but had a search and saw that the homemade Baileys came up here a few times.
Anyway, I tried making the Irish Cream recipe from the Lorraine Pascale last minute Christmas show. I thought it would be similar to Baileys which DH loves, but it's come out quite thick, too much coffee flavour, and not enough Irish Whiskey flavour coming through.
Is anyone very good at tweaking these things? Can I possibly dilute it a bit (water?) & add in more of the chocolate (or something else). It's made a full wine bottle & DH said to just bin it, but that seems sooo wasteful. :mad:
Basic recipe was 200ml double cream, 2tsp instant coffee, 40g grated chocolate, 50ml Irish Whiskey, good swig of vanilla, 2 tins condensed milk (trying to remember everything as recipe is scribbled down in the kitchen somewhere).
I don't really drink alcohol much, and haven't tasted Baileys, but this tastes like a coffee milkshake with just a hint of alcohol coming through! I thought it was quite nice, but I certainly wouldn't drink more than a glass a year & it'll go off before I get to next year!! :rotfl:

i make a sugar free version and if it doesnt taste right i just keep tweaking til it does lol
if u want more of a whisky flavour just add more and give it a good mix up. keep going til u are happy with the flavour. have to say 50ml of whisky to that volume doesnt sound a lot

Thanks for that. I think I'll just have to play around with it today and see what happens. I'm fine tampering with food recipes, but have never really done a drink before... and altering things with so much cream/milk seems a little scary! I'll start by adding more irish whiskey & chocolate first and see how that goes.0

how about dissolving some cocoa powder and/or coffee in whisky and adding that. to be honest u dont have much to lose if its that bad - well other than a bit more whisky

I don't mind ending up with 2 bottles!
Will try with the cocoa powder in the whiskey (no more coffee as that's what I'm trying to get rid of). I suppose the whiskey will thin it out a bit as well. Thanks!

If the worst comes to the worst.... and you can't tweak it to your liking sounds like the drink could be used on ice cream, over dried out puddings, to marinate dried fruit etc.
Actually I think I could force down the odd glassful.. hiccup:eek:
Seriously though hope you can save the day.
If you want it more chocolaty could you sprinkle chocolate powder on top?(think that's what you do with a brandy Alexander)Being polite and pleasant doesn't cost anything!

Thanks, yes, I was thinking about using it for some cooking projects. I have made Baileys scones before and they were delicious!
So perhaps if DH doesn't care for it now (a lot more chocolatey, a bit thinner & quite a bit more kick!)... I'll get some even tastier treats made up that we both might enjoy.0
