Is there an arrangement fee for this mortgage?
There is no arrangement fee for this mortgage.

What happens if I pay my mortgage off early?
There are no early repayment charges for this mortgage.

Is there a "KFI" document? You should have been given this if this is what your broker is recommending.

In there it will have all the information (ie fees, what happens if you no longer want the mortgage - ie to move elsewhere).
Because of the term offered, that does seem like you dont meet their affordability criteria on a 25 year term so they have extended it. If you can afford it, then you may be able to overpay and this in turn will bring the term down - but overpayments will be discussed in the KFI document.

As has been mentioned, your broker should be explaining everything to you. If you havnt had the KFI, ask for a copy.
