Using up baked potatoes ?

On Sunday I made lots of baked spuds for a big family lunch and had two big ones left over. I had cooked them in the oven with the roast, wrapped in foil. So on Monday I popped one into my small oven to re-heat for the two of us, and after about 40 mins it seemed nice and hot so I took it out and halved it, and it looked (and tasted horrible. The skin was all damp and flabby (wasn't on Sunday) and the inside tasted like old potato. Can anyone tell me any way at all to use them up but so they taste nice ? M&S sell filled jacket spuds and I'd love to do something like that but I have no idea how they get cold cooked potato to re-heat so deliciously :(

  • We often re heat left over jackets, but for best results I cut them in half while cold, scoop out the flesh and mash it up. Then I mix the crushed flesh with some grated cheese and onion (if I've any creme fraiche I stick in a dollop of that too), and pop uncovered in an oven for 20- 30 mins. Always turns out delicious!

  • Baked potato skins for me too. I also cut them in half when they are cold and scoop out the middle. Mash the potato, add some ham or bacon (chopped small) and add grated cheddar cheese. Mix the filling together and fill the scooped out skins. I often freeze them ať this point for easy tea time meals, but can be cooked again with a light sprinkle of cheese. Usually takes 20mins ať 180 c in my oven but just make sure it cooked through.

    Wedges are also a family favourites. Cut lengthways when cold, placed on a baking tray, sprinkled with salt and black pepper. You can drizzle with olive oil, but its not essential. Baked in the oven, about 180c until slightly crispy. Yum yum.....

    Mash the insides thoroughly and make fishcakes or corned beef rissoles - delicious!

    Great ideas, thank you - can you please tell me if you just bake the spuds originally with or without wrapping them in foil ? I'm not sure why I do that - always have, but do other people wrap or leave them 'naked' ? I think wrapping makes the skins very soggy when cold, so perhaps that's why mine tasted nasty.

  • I don't bother with tin foil just get some big spuds, stab them a bit and chuck them in the oven (hour on high or 2 hours medium).
    any leftovers I just re-heat in the microwave and eat soft as I cant be bothered to put the oven on, although you could rub a little oil on the skin and then bang in a hot oven for a while.

    I always use foil on the potatoes when im making potato skins or wedges. Im not sure who told me this, but i keep the foil wrapped potato out of the fridge until they are made into skins. If they are wet when unwrapped i use a papertowel to absorb the moisture before cutting them. After making the skins i would then chill /freeze them. They always taste great and popular with the kids. ;-)

    Slice them and toss in a roasting tin of hot fat, roast till toasty brown and crispy.
