When can I ice my christmas cake?

How far in advance can I ice my cake for Christmas day? I am using roll out icing (no marzipan as my daugher is allergic to nuts).

    I would say maybe a day or two before, i normally do it night before though :) x

    I marzipanned my 5 cakes yesterday and will ice them next week, probably on Monday, after the marzipan has dried a bit.

    Three will have royal icing and the other two roll out icing.

    One of my granddaughters was allergic to nuts, but thankfully at 14 has now grown out of it. She had an anaphalactic shock when she was 2 after eating some cashew nuts. It was very, very scary. She had to carry an Epipen at all times (school had one, I had one and my daughter had 2 - one at home & one in her handbag, but thankfully we never had to use them. She had twice yearly tests at the hospital and now has to eat a few nuts every week to keep her immunity going and now only has yearly checks.

    I have stopped putting nuts in my Christmas cakes since then and used to double ice my daughter's cake with two layers of roll out icing. I had to check the ingredients of each pack though as I found some makes couldn't be guaranteed nut-free.

    Sorry to have hijacked your thread savingmonkey. Back to your original question..................you can ice your cake anytime from now, but don't store it in an airtight plastic container or it might 'sweat' and go a bit sticky. I store mine in old Roses or Quality Street tins and find they keep well.

    LV Sue - We found out about daughter's allergy when she was 2 and she is now 4 and half, no reactions since thank goodness, she has an epipen too. Interesting your grandaughter was tested over and over, we have not seen a health professional about her allergy since diagnosis. Yes I have to check all labels, even on the strangest of things it can say unsuitable for nut allergy sufferers, noticed it on sainsbury's cornflour not long ago!
