Freezing double cream

Can anyone help me with this, please :)

We had a couple of pots sent in to work the other day, I've taken them home but have no immediate use for them and would like to keep them for Christmas. The instructions say 'can be frozen if whipped', does this mean I need to whip it before freezing or that it will separate so I'll need to whip it after defrosting?

    You need to whip it before you freeze it.
    I normally whip it and put blobs of it on clingfilm resting on a baking sheet. This means if I only want a small bit, I do not have to defrost the lot.

    However, I bought a goose last Christmas and froze blobs of goose fat. They look exactly the same in the freezer. Do what I didn't do, and label quickly

    I looked into this because I ended up with too much single cream and the answer I got was that it needed to be whipped and then frozen (and therefore not single cream) but there were suggestions of making it into butter, too. (Again, not single cream.)

    I am not sure how great it would look when defrosted, but I am sure it would still taste delicious.

  • That is where I have been going wrong. I have frozen double cream a couple of times without whipping it. When it defrosts it is a horrible texture, and whipping at that stage can't do anything to rescue it. Great tip; thank you.
