I am looking for ideas for risottos, cannellonis & Quiches pies
I am giving this meal planning idea a go in order to cut down waste and hopefully save some pennies.
I have a couple of boxes of cannelloni tubes (which will do us for 5-6 meals)
What fillings do you have ??
I've done a mushroom, grated carrot, onion and creme fraiche filling, and know the bolognese idea - any others ??
Also a bag of risotto rice (bought with good intentions but never opened LOL)
I was wondering if you had any favourite recipes that I could try out??
Need to have some more ideas - family are a bit bored with my usual repetoire of meals LOL

ooh risotto is one of my faves! basically because you can put anything in it!!!
i like to use a little onion and butter at first, then some white wine. then i add anything from this list:
chicken (leftovers)
courgette
broccoli
peas
mangetout
bacon bits
mushroom
leeks
cooked in chicken stock (usually made from rubber chicken carcass the day before)
OR
chopped chorizo (makes the rice a lovely deep colour and flavour)
with any veg i have (sometimes chopped bell peppers in there)
cooked with a tin of chopped tomatoes
yum yum!! makes me hungry thinking about it!!
have planned to make risotto tomorrow or tuesday...from what i have in the cupboard/fridge/freezer it will probably be white wine, chicken stock, mushrooms, peas, leeks, courgette and mangetout. i love when it's chock full of green veg! lovely contrast between the soft rice and crisp veg.

ps i know i just listed ingredients, but usually the risotto rice packet has cooking instructions on it. if you want me to be more specific about how i cook it just ask!

For the canneloni tubes, how about a tomatoey pasta sauce filling, and top with mozzarella?0

hmmmm I love risotto. I make mine with onion and a little butter, cook in a tin of tomatoes and add chilli paste for an extra kick. If i have any left over chicken I add that too but find it just as nice without. Sprinkle with cheese

I have used Gary Rhodes' "Short-cut Rhodes" Parmesan Risotto recipe every time I have made risotto. It is fabulous and is easily adaptable. The only essential ingredient (other than the rice that is) is parmesan. Two rules - use arborio rice and make sure the stock is hot. After that, you can use anything you like: smoked bacon, fresh herbs, spinach, chillies, peppers or mushrooms, black pudding (?), leeks, prawns, crab, etc.
As for the canneloni - why not go vegetarian? Use a basic tomato sauce but use aubergines, courgettes, lentils, mushrooms, leeks, etc. Top off with some mozzarella and parmesan.
