What about a fruit salad with nice ice cream or if you like it(I dont) stewed winter fruits with cinnamon etc, like a compote?
You could also make the sponge yourself from scratch for the trifle. Value range flour is cheap enough.0 -
We always have Bubble & squeak or mash potatoes if we ate all the veg on Christmas day, with lots of pickles & chutneys and cold meats & cheese.
Plus A lovely fresh loaf of bread and pile everything on.0 -
One of my favourites is Coronation chicken/turkey.0

ooh I love coronation chicken, why have I never thought of this?!0

I often make mini chicken skewers, bite size pieces of chicken breast marinated in either garlic & olive oil or sweet chilli sauce, threaded onto cocktail stick & oven cooked. They are nice hot or cold.
Mini jacket potatoes; bake then cut in half, scoop out the potato leaving the skin case & mash the potato with a bit of grated cheese & chopped chives (or you can put in onion, peppers, mushrooms, bacon, ham, whatever at this point) Re- fill the potatoes & warm through in oven before serving.
Also saw some spicy meatballs on sticks on a TV ad that I though would be simple to make with some mince & herbs, will serve with a home made tomato dip, like tapas.
A big plate of garlic bread.
And I like lots of salads, & dips with crudites & breadsticks.0 -
What about a cheesecake for one of the desserts?0

Profiteroles are good to make yourself, or chocolate dipped strawberries, dipped in milk choc, allow to dry, drizzled with white choc in lines over the top, then sprinkled with non toxic holographic white glitter, in a christmassy bun case - look stunning, or white choc strawberries rolled in desiccated coconut. i do chicken skewers with a peanut dip, more roasties done with rosemary and garlic, and cold meats, stuffing and cheese, crackers and pickles.
And i always buy the chinese/indian selections regardless of where they're made!! My PEK comes from Poland!!0 -
We're doing xmas on xmas eve, so xmas day will be our boxing day (are you confused yet, lol)!
I'm veggie and going to make this

and this

and then left over meat, cheeses, chutneys and pickles, some home baked bread and crackers, bubble and squeak etc. Plus homemade light xmas cake and mince pies. People can just pick at it all day.
Intend to have plenty of pud left over from the previous day (xmas pud, homemade cheesecake, something chocolatey).
Yippee!!! :jTrying to be a man is a waste of a woman0 -
a couple of ideas for you...
a few days before cook some vol au vant cases and store in an airtight tin, you can then fill with left over turkey in a curry mayo or egg mayo or some prawns.
if you have some of the silicon cup cake cases, make individual cheesecakes or banoffees.. again a day or 2 before..
make a roast soup! chop and saute in a bit of butter 2 onions.. when softened add any left over vegetables, turkey, pigs in blankets etc!! add chicken stock and any left over gravy, simmer for 20 mins, whizz up, season, put in bowl and serve with a drop of cream... any veg can be used... but WARNING!!! if you use red cabbage you shall have a pink soup
