Dinner ideas wanted

Hi Guys - I'm in need of your ideas
I'm working night on xmas eve and day, so will be sleeping all xmas day and part of boxing day.
I want to have my parents round for dinner on boxing night, but don't want to be faffed doing a full roast dinner. I also think that doing buffet style food would just be a step to far for me after night duty.
But, I would like it to be a bit special - not just meat pie/ chilli etc.
What kind of thing would you guys do? I have a slow cooker/microwave etc. I will be getting home at about 8:15am and hope to be out of bed by about 2pm. So cooking can start from 3pm (need a bit of time to come round!). I have decent kitchen skills and do love to cook - I'm just stuck for ideas at the mo!!

how about cooking a gammon in your slow cooker or a bit of beef - 1/2 price at mr t this week.
if you prepare the veg the day before if shouldn't take long to put it all together.Cats don't have owners - they have staff!!

I second the gammon in the SC & about getting the veg ready the day before so that you can pop it in with the gammon when you get home in the morning, then when you get up in the afternoon all you need to do is your green veggies, mash or salad or whatever you'd like to serve with it.0

I would suggest salmon wrapped in foil with - depending on taste - honey and chilli and lemon juice, or dill and lemon juice, roasted in oven. Frozen salmon is fine and has it's own info on how long to cook for from frozen. Serve with some boiled baby pots and boiled baby veg for min effort. Lighter than Christmas dinner. Takes 1/2 hour all in.
