Beef fat for a joint? What do I do with it?

    Hi, when my mom does roast beef for sunday dinner, she cooks the beef in the oven with the fat on top on quite a high heat to start off with and then turns the oven down. She parboils potatoes and puts them in the roasting tin with the beef and the fat and spoons some of the juices over the potatoes. When she does the yorkshire puddings, she puts some of the juices from the roasting tin in the bottom of the yorkie tins before pouring in the batter too. I love my moms sunday dinners, they always taste fab and I can never get mine to taste the same no matter how hard I try!!! My dad also likes beef dripping on his cold beef sandwiches, so when the meat is done, if there are any juices/fat left over, mom pours it into a small cup for him. It goes hard and Dad then spreads it on his sandwiches for his tea - he said he grew up on this kind of stuff when he was a kid. He also goes on about liquor from the frying pan after the bacon has been cooked, he and his brothers and sisters used to have bread dipped in the bacon fat for their breakfast after their dad had eaten the bacon. My gran and grandad had ten kids so they had to stretch things pretty far I guess....... My dad still dips his bread in now when he does a bacon sarnie and it does taste really nice.:D

    That's what I'd do too ;) I'm a great hoarder of bits of fat (proper fat not fake stuff in tubs ;) ) -we don't eat vast quantities of the stuff, but it certainly makes life in the kitchen more interesting when you cook with traditional fats.
