Parboil potatoes in advance - how to store?

Thinking ahead to Christmas dinner, I know that you can peel and chop potatoes the day before and store them in cold water. I read somewhere though that you can also do the parboiling the day before.
How would you then store them overnight? In water? In the fridge?
This would be a big help as then I could just chuck them in the oven on the day.

I have already done mine, they are parboiled and roasted until just starting to colour then I open freeze on a baking tray overnight, the next morning pop them into freezer bags spread on a baking tray and heat through in the oven from frozen and they only take 20 minutes to cookBlessed are the cracked for they are the ones that let in the light

Exactly the same way as butterfly brain! and for some strange reason they always seem 'crispier' than doing them from Fresh the same day!0
