Help with Gluten Free Christmas baking!

This is my first Christmas after finding out I have Coeliac Disease. I've decided to bake my own mince pies and a small Christmas Cake (in a loaf tin).

The thing is I won't eat things in one go. Can you freeze Mince pies and slices of Christmas cake?

I was going to buy DS ready made shortcrust pastry to make the mince pies but some websites say to cook mince pies then freeze whilst others say to freeze raw and cook from frozen. I'm very confused!

Also can you still bake a gluten free Christmas cake in advance or do they go off quicker than normal?

Any help and advice would be much appreciated!

  • Personally I would cook mince pies then freeze, reheat from frozen, but think either way is ok.

  • You can freeze both and it really doesn't matter if you freeze the mince pies cooked or uncooked, it is a matter of preference, I have done it both ways and TBH I find it easier to cook them first, defrost and zap in the microwave for a minute.

  • Thank you both! That cake looks delicious, I must try it. I think I would prefer to cook the mince pies prior to freezing.

    I'd be really interested if anyone has a nice gluten free pastry recipe, my Dad has just found he has Coeliac Diease and he loves his mince pies so is a bit upset about missing them this year :(

    A bit off topic, but if you do an on-line shop with ocado, they have a really good range of gluten free foods, including pies. Their GF seeded bread is amazing - just like 'real' bread! I do a shop once a month and freeze some of the GF goodies for later.

    I make pastry using usual recipes but just replace with GF flour, usually Doves Farm, so far so good but not tried mincepies as hate peel. My only tip would be if the recipe doesn't call for egg, I would add anyway as it adds a bit of stretch! I did Hairy Bikers xmas cake last year, Delia the year before, again just replaced the flour with GF and usually end up finishing them at Easter so yes it should keep. I don't feed my xmas cakes as I don't like them too boozy.

    I order bread from an online GF/WF specialist bakery and I have to say it is fantastic and such a joy being about to have toast/bagels every day! Even my OH thinks the bagels are better than other well known brands! Like LazyDaisy I order once a month and keep in the freezer.

    You could freeze bread and use for nibbles, ie something on toast or mini pizzas etc?

    I make pastry 50/50 doves gluten free plain flour and potato flour, makes a lighter pastry than just the GF flour and I agree with using an egg instead of water. Just make sure the mincemeat you buy is gluten free too. Hope your Dad enjoys them :)

    Thanks for you tips everyone now I just need to suss bread making although we can buy GF bread here he lives in Spain so would be great for him to have a recipe he can make as he can't get GF bread there :(
