Ginger wine - possible without brewing????

My uncle made fabulous ginger wine :beer:. The older it got, the thicker :T. I'm not exactly old style but I fancied making some so had a look at recipes, only to find they are all done with yeast etc.
I'm certain my uncle didn't do any of that (unfortunately he and family are all gone now
). I naively thought it would be like making limoncello or similar. I'm sure he started with alcohol and added ginger.
Does anyone have any ideas?

Use brandy or whiskey as the base, maybe vodka?, add sugar and steep the ginger in it (you may have to strain it out if you use the powdered variety).
