Hi! I made my Christmas Cake on Tuesday, abd had some mixture left over after filling the tin. I decided to make mini cakes in my muffin tin and popped it in the fridge (covered in cling film) while my main cake baked. I promptly forgot about it until now. Would it still be okay to bake do you think? Any advice welcome!

Should be fine, it's only a couple of days. Most things will keep that long in the fridge.
