Beef fillet is a lovely cut, just make sure not to overcook it. I would use it as straightforward steak and cook with pepper sauce or slice it into strips and make boeuf stroganoff.

    Ditto.
It's the best meat, don't do anything complicated with it.
    Enjoy!

We quite often do better cuts of steak (fillet, ribeye or sirloin), with a sliced mushroom and red onion sauce.
We season the steaks immediately before frying with sea salt and cracked black pepper.
For the sauce, we finely slice chestnut mushrooms and red onions, and then saute in a small pan with some crushed garlic. When they are soft we add a little Elmlea light cream, and after the steaks have rested, use this as a bed to serve them on. They usually go well with oven cooked french fries (thinly cut chips cooked in a little olive oil).
