28 and can't cook anything...

Hi there, can you help? I never cook anything from scratch and never have (I hate cooking :-( ) however Im in a new job that requires me to be able to cook something and someone suggested veg soup.

Here is what I was told to do:-

Half fill big pot of water
Add salt and pepper
Chop potatoes, carrots and onion into small pieces
Add stock cubes to water
Add veg to water
Simmer (don't know how long!)

Is that all I need to do? And can anyone suggest any mince or chicken dishes that are easy to make?

  • What job is it that you have?

    This is a recipe for my most easy dish- you just bung it all in and 45 mins later- an amazing meal!! Also- change the amount of chicken depending on how many you are feeding- this would feed three/four. No need to change the rest really.

    140g chorizo
    2 red onions , cut into wedges
    4 garlic cloves , left whole
    4 chicken thighs
    4 chicken drumsticks
    4 medium potatoes , unpeeled and cut into wedges
    2 rosemary sprigs (i used dried but this is optional)
    2 tbsp olive oil

    Heat oven to 220C/200C fan/gas 7. Cut the chorizo into slices the thickness of a pound coin. Put the onion and garlic in the bottom of a large roasting tin. Scatter over the chorizo, then add the chicken pieces, potato, rosemary and a couple of grinds of black pepper. Drizzle with olive oil, then bake for 45 mins.
    Halfway through the cooking time, give everything a good baste in the chorizo juices.

  • If you really can't cook the first things i started with when i moved out in to my own flat was

    spag bol the easy way

    sauspan of boiling water-add spagetti
    fry mince until brown
    throw in a jar of dolmio
    drain off spagetti and plonk yor mince on top job done in 10mins.

    obviously you can start adding to this as you get a better cook, make your own sauce like i do now, onions, carrots, garlic-you can throw anything in a spag bol lol

    shepards pie is quite an easy one
    fry lamb mince (you can use beef) and an onion, some mushrooms
    a sprinkle of rosmary
    handfull of frozen peas
    a sprinkle of gravy granuals-and a cup of water into the frying pan to make the sauce.

    put it all in a casserole bowl-top with mash potato and bung in the oven for 30-40mins.

    I'd lightly fry the onion and carrot (I'd also put in a stick of chopped celery. You can freeze the rest) for a few minutes, add some mixed herbs and a pinch of chilli powder or flakes. Then stock, water and potatoes. Simmer until veg is soft then blend/liquidise.

    Turn on oven to 200C (Mark 6). Boil some potatoes and cool.

    Mix pieces of cooked chicken (whatever is left over from a roast chicken or cook a couple of chicken breasts and cut into pieces) with 1 tin of undiluted condensed chicken or mushroom sauce. Stir in a teaspoonful mixed herbs. Put into oven proof dish. Top with slices of cooked potato and dot little pieces of margarine on the top.

    Bake for about 20 minutes and serve with favourite vegetable.

    Your soup will be very watery if you half fill a big pan. I would use less water you can always add more later. Soup is a great way to learn how to cook.

    Are you just cooking for yourself, or others? What saucepans/oven dishes do you have? Do you have any posh gadgets like food processors? Do you have a fridge or freezer?

    Hi there, first of all, thanks to everyone so far for your suggestions!

    PasturesNew, I am cooking for upto 7/8 people, 5 of whom have various additional needs including dysphasia so anything that I cook needs to be able to be blended down.

    The only "gadget" we have in the kitchen is a hand held blender, various sizes of oven dishes and pans and a fridge and 2 freezers.

    agree with LindsayKim, also can make chilli in same batch as spag bol;

    Fry the mince with diced onion and x2 stock cubes
    Bung in chopped tinned tomatoes
    bung in 2 x chopped cloves of garlic or cheat using lazy garlic teaspoon of
    Put mug of water in and simmer until it has thickened (on low for about half hour, poss longer, depends on what you want it like)

    Put one half aside for bol sauce. Then for your chilli sauce
    add tin of kidney beans
    add half teaspoon of chilli powder (taste to see if want more)

    Can add any additional veg etc to bulk out. Add these whilst the sauce is simmering. Ie peppers, mushrooms, corgettes etc to get more veg in folk. Does the trick here!

    Serve bol with garlic bread and obv pasta.
    Serve chilli with rice and/ or garlic bread/ salad
