An onion gravy recipe? Or a roast beef/chicken gravy? The meat ones I make from the juices and veg in the roasting tin but the onion gravy is pretty easy:-
Thinly slice couple of onions (red or white) and fry gently in a knob of butter and a tbsp of oil and a sprinkle of brown sugar (will caramelise it) for around 10 mins till soft.
You can add some red wine at this point if you want to but not necessary. Let the alcohol burn off before adding the flour.
Add a tbsp of flour and stir then add 1 litre or beef stock. Stir till all mixed well and simmer for 5 mins. You can add a couple of drops of Worcester sauce as well if you like.
Once thickened up I add a couple of drops of the browning and season with salt and pepper to taste.
That's it basically. I just make it up as I go along but this is the general line I follow.0 -
