My attempt at deciphering your menu would be
Mousseline - the sweet corn will be pureed down to a mousse and there will be a dollop of it on your plate.
Fruit Salsa will just be some finely chopped fruit.
Roquette and Mizuna are both salad leaves, so I think they are just trying to make a salad sound posh. No idea what cheese crackling is unless they melt some cheese, let it cool and cut it into shards like crackling.
Regianno cream will be cream with some Regianno cheese mixed into it to make it a savoury cream.
Hope that helps, no doubt some whizz kid chef will be along to put me right. My only cooking skill is watching Masterchef.:rotfl:0 -

Even before I had all the food intolerances I was a very fussy eater just plain food hotels dont mind if you contact them in advance and ask for alterations to the menu they are quite happy to offer alternatives especially if they are cheaper and easy to prepare0 -

MMW, i totally agree really faffy sounding food. think id try picking at a crepe (pancake) with the savoury filling and decline the cream and woul;d have to hope the pudding was a big one. but that just me cos im veggie.
the sweetcorn thing sounds like puree to me and if you dont like bird youre stuck with the meat choices being chicken or guniea fowl (wouldnt imagine the breast of one of those to me very filling
