Can I freeze blind baked pastry?

So I'm thinking to save time, of making my pastry cases, blind baking them and then freezing them. Can I do this or is it best to roll out the pastry and freeze it raw?

    just roll the pastry out line your tins and freeze then bake bake blind when needed hope that helps :beer:

    Hi, yes, I've frozen pastry cases both raw & blind-baked. Both ways work fine. Useful way of getting ahead of yourself if you've got a buffet or party to cater for as v easy to get them out of freezer & just bung a quiche filling together or whatever to fill.
    2026's challenges: 1) To rebuild our Emergency Fund to at least £5k.
    2) To read 50 books (12/50) 3) The Re-Shrinking of Foxgloves 8.1kg/30kg
    Remember....if you have to put it on a credit card, extend your overdraft or take out a loan to buy whatever it is, you probably can't afford it, as that's not your money, it's somebody else's!

    Do you need to defrost a baked blind case first ?

    no just place your filling in and bake it will be fine

    I freeze the raw ball of pastry all the time. Just defrost overnight and then roll out and cook as normal.
  • Thanks for the advice. I blind baked 3 cases last night and wrapped them in cling film and popped them in the freezer.
