There seem to be so many butterbeer recipes online (based on the ones served at universal in Florida) but don't know which to go for! I see a lot of American things use 'meringue powder', is that easy to get in the uk, I think of meringues as just sugar! Has anyone tried any?

Ooh, I might have to make some! I had some at the studio tour in September, and it was so good! Please let me know if you come across a nice recipe0

Meringue powder may be powdered egg whites, which may be easier to find in your search0

I think meringue powder would be meri-white or similar. You can get this in some supermarkets or cake decorating shops. I think you can even get it on ebay (and it'd probably be cheaper there too

this is the recipe we use - I don't like the stuff but the kids say it tastes right!
Ingredients:
1 cup (8 oz) club soda or cream soda
1/2 cup (4 oz) butterscotch syrup (ice cream topping)
1/2 tablespoon butter
Directions:
Step 1: Measure butterscotch and butter into a 2 cup (16 oz) glass. Microwave on high for 1 to 1-1/2 minutes, or until syrup is bubbly and butter is completely incorporated.
Step 2: Stir and cool for 30 seconds, then slowly mix in club soda. Mixture will fizz quite a bit.
Step 3: Serve in two coffee mugs or small glasses; a perfectly warm Hogwarts treat for two!xxx Nikki xxx0
