chilli jam not set

have made this before but this time really altered the quantities. even though according to sugar thermometer it was at set point its not yet set. If its not set by tomorrow then guess its not going to happen,

whats the best way to sort it/ Shall i bung it all back in pan then add some more jam sugar? or shall I add some liquid pectin?

    In what way did you alter quantities? Was it a simple double/triple of the original recipe or was it a bit more freestyle?

    If it was a freestyle alteration it will be difficult to know what to add to rescue it. I find that liquid pectin adds a strange bitterness to the finished product but it might be worth a shot if you spent alot making the first batch.

    If its a simple double/triple recipe, then add a few good squeezes of fresh lemon juice and reboil hard for 5 minutes.

    I had the same problem, OH bought preserving sugar instead of jam sugar . I used Jam sugar in my first batch and it turned out well.
    I had doubled the recipe this time and used green and red chillis and green peppers.
    I am new to all this so frantically googled Pectin?
    Finally grabbed five apples , peeled them , cored them and chucked the whole lot in the pot loose as I didn't have a muslin bag.Added 3 good squirts of lemon juice .
    I was desperate by this point ..
    Re boiled at rolling boil for another ten minutes and used the cold saucer test.
    Scooped out the apple bits and TBH it is a bit thin but the apple has given it a really lovely flavour and the chillis are suspended in the jars.
    Next time I will make sure it is Jam sugar !!!

    I did 1.5 times the recipie so not sure what the problem was. especially as it had def reached the correct setting point. In the end I added some liquid pectin and reboiled and now its set. Made some more yesterday with the priginal recipie amount and thats set fine! I had loads of chillies for a pound and am now going to freeze the rest!
