I've found what sounds like a glorious cake recipe, here http://www.womanandhome.com/recipes/531409/jamaican-christmas-cake.
However, one of the ingredients is 'unrefined cherries' and I'm scratching my head at this. I've done a google search, which doesn't give any answers.
I'm inclined to think it's a typo error, and unless one of you can enlighten me, I'll go with glace cherries - but any wise cooks , your advice would be welcomed

I try not to get too stressed out on the forum. I won't argue, i'll just leave a thread if you don't like what I say.

Id say normal cherries would be fine to use.0

it gives Glace cherries as seperate ingredients, so I'd say 'unrefined' cherries are not Glace cherries, but perhaps like dried cherries, as it does say don't soak the unrefined cherries...
It looks like a lovely recipe OP, do let us know how it turns out. Please forgive me if my comments seem abrupt or my questions have obvious answers, I have a mental health condition which affects my ability to see things as others might.0 -
Hi, Martin’s asked me to post this in these circumstances: I’ve asked Board Guides to move threads if they’ll receive a better response elsewhere (please see this rule) so this post/thread has been moved to another board, where it should get more replies. It says to stir glace cherries into the mix, so the 'unrefined' cherries are glace.
I think it means uncoloured - the ones with colour are bright red, the uncoloured are a deep dark red (much nicer!).0 -

Of course you are right, I should have read thru the whole page more carefully and I would have seen it. (need a 'smacking my own forehead' emoticon)
Right, I'm putting the fruit in to soak tonight. I might bake it tomorrow, or as the recipe says, I may well leave it until later in the week.I try not to get too stressed out on the forum. I won't argue, i'll just leave a thread if you don't like what I say.0 -
Just come back to say that I finally got around to making this cake
WOW !!
It is Gorgeous.
The recipe says it will keep for up to 2 weeks in a tin, but this one won't. I reckon it'll be all eaten up in about 7 days, despite being very rich and lush.
I rather think I'll have to make another before Christmas.I try not to get too stressed out on the forum. I won't argue, i'll just leave a thread if you don't like what I say.0 -
Definitely glace cherries. Thanks for the link, will definitely be visiting my Jamaican roots with this one! Just need a nice egg nog recipe now, then I'm coolLoving the sunny days!0

It'll be those dark coloured glace cherries, which are less artificially red. In fact, I think they are just candied & not dyed. The really bright red ones which we usually see in the shops are coloured I think to be so astonishingly bright red. Have seen the dark ones in supermarkets & used them. They're fine.2025's challenges: 1) To fill our 10 Savings Pots to their healthiest level ever
