It is a civil debt, not a criminal matter, so it would go before judge, rather than a magistrate.
Their inability (and admission thereof), to produce photographic evidence is important and could be made much of.
If signs were displayed, and displayed adequately, (check that they were), then it can be said that there was a contract.
Sainsbury's may actually sell parking enforcement rights in their carparks (rather like tax farming). Alternatively, the enforcement people may simply be acting as their agents. Find out which situation applies.
If it is the first, then there is a question as to quite how the supposed contract applies (or even exists, as Sainsburys puts up the warning signs, but a 3rd party issues tickets and profits thereby).
In any situation like this, summon a senior member of staff at once as a witness. Also consider going back into the store and purchasing a disposable camera (get the cost of that back at the hearing).
