Hello :hello:
mmm Lamb - my favourite!! I would use the leftovers and make a Lamb hotpot and freeze it for another day.
I'm sure there will be some more suggestions for you to choose from shortly.

I had some left over last week and made lamb and veg soup with it on Monday - dead easy, just lamb, veggies and stock in a pan, left for about an hour then blended it. Tasted yummy!! Even OH had seconds!!

I might also try muncing the rest of mine next time and use it straight in a bolognaise or something similar. I bought a cheapie mincer for £5 a couple fo weks ago and it seems to do a pretty good job with cooked meat.April 2021 Grocery Challenge 34.29 / 2500 -

With our left over lamb last week, I made a mince and potato pie. Caramelize a sliced onion, add to your minced lamb, (I just do mine in the blender) add some left over mash and gravy and bung it in a pie, eat hot or cold0

We had a leg of lamb last weekend that was a little bit too big, my DS made a curry with the leftovers, not sure what he put in it but it was extremely tasty.0
