If i dont have a vanilla pod can i use vanilla extract?

as the title suggests, or can i use essence, which is best to go in a cake.

Depends on the recipe but I'd say it would be fine. I only ever use vanilla extract (always buy the best quality I can find though).

recipe says to use vanilla pods, is this a good quality one Nielsen Massey Vanilla Extract or asda extra special

You can usually use extract in place of pods as it is made from actual vanilla pods/seeds.

The essence is artificial and won't give as tasty a result.

I use a pod in the big sugar jar that's filled with caster sugar so my caster sugar always tastes and smells of vanilla but I too use good quality vannila essence about a fiver a bottle but it does go a long way as its quite strong

Vanilla essence works just as well as pods. I have even started buying vanilla paste to use as it gives you the seeds but works out cheaper than buying a couple of pods.
