Seafood & Veg Antipasto - meal ideas?

I have a jar of seafood & veg antipasto in olive oil thats been lurking for a while :rotfl: & no idea what to do with it.
I dont want to eat it on its own, so could I add it to anything other than pasta to make a meal? I was hoping for a risotto type thing, but when I've tried to make risotto before it has always gone horribly wrong if I've tried to (ahem) adapt a recipe - any ideas anyone?
Or should I stick it back in the emergency cupboard

& as for some happy ending I'd rather stay single & thin

I would make a plain (i.e. veg stock) risotto, and then stir some of your antipasto into it as you serve it.
Or make up some polenta and let it cool (or buy a ready-made block), make giant chips (like Jenga blocks!) and grill them to serve with the antipasto.0 -

Mmmnnn - thank you. The polent idea is inspired..... Decisions, decisions.& as for some happy ending I'd rather stay single & thin
