Something I came upon as quite cheap last night and tasted lovely.
3 Garlic cloves - people are still talking to me this morning!
100g of soya mince
two tins of tomatoes
one tin of mixed beans
Chilli powder (hot!)
Ground cumin
Oxo (beef or veg)
1 medium red onion
Courgette (we used a half that was left over, but feel free to use a whole one)
yellow/red pepper (sweeter than green, but whatever you've got)
large button mushrooms
rice
Put the rice in the pan with some salt and three times the water. Bring to the boil with the lid on and turn off the heat. Leave until the water has fully soaked into the rice - no need to stir, take the lid off etc (best to have a glass lid) takes about 15-20mins. This is much more energy efficicent!
Chop the onion, crush the garlic add a table spoon of cumin and chilli powder to taste. Put in the pan with no heat. Add two tins of plum tomatoes (nothing wrong with value!), the drained and washed mixed beans, the hydrated mince (requires water as per the packet instructions) the oxo, the courgette, pepper and mushrooms (cut really roughly, bigger the better!) and turn on the heat, bring to the boil and simmer until rice is cooked.
Serve with a little strong cheese on top and some homebrew beer/cider.
Notice we used no oil at all in the receipe and it tasted fab!
For afters try cinamon toast and a cup of tea ;- )

I'll be trying this one soon I think - but using mild chilli. My DH likes hot chilli but he can add tabasco to his own!0

There are 5 of us - but as the two youngest (2 and 7) barely eat enough to keep a sparrow alive there should be plenty for the rest of us (10 year old has a good, healthy appetite).0
