Smoker help please (as in food)

I understand you put meths in the little petri dish and then a handful of wood shaving in the bottom meat/fish on rack in box and put the meths under and lid on.

Rather than the one I saw Hugh-F-W do the other night that was a metal bread bin you put and rack in and put the whole thing on a fire.

It's not got any instructions so no idea how long items should take. I am happy for trial and error with fish but more reluctant with chicken.

Can anybody give any hints and tips, or point me in the right direction for recipes.
