Baking ideas

Hey guys hope your all well,
Had a phone call from the MIL tonight, and she has asked me to give her a hand at a local fayre that she is doing. She wants a hand with the "catering" so to speak. Usually this includes rolls, bacon sandwiches, then cakes and bakes that people buy to take home etc.
The problem is she isnt making any money because people aren't buying many of the things she makes. Now through her own admission she isnt the best baker in the world and apparently thats where I come in. I am trying to come up with some ideas that wont cost the earth to make and will be a crowd pleaser.
Any ideas would be greatly appreciated.

Hobnob Recipe
Ingredients
8oz sr flour
8oz sugar
8oz porridge oats
8oz margarine
1tbsp golden syrup
1tbsp hot water
1/2 tsp bic soda
Instructions
Mix the flour, oats and sugar, melt marg, syrup and water in a pan. Stir in bic soda and add to dry mix.
Then mix well and make into smallish balls which you then put on a greased tray and flatten slightly with a fork. Put in the oven at 180 degrees C for 15 mins... and cool on the tray. The aim is to get them golden in the oven not brown.

Obviously need to cost up, avoid nuts and some fruits.

She is insured to sell food to the public, isn't she? With certified kitchen and food hygiene certs? And registered as self employed with HMRC.Science adjusts its views based on what's observed.
