Thanks for this thread OP. I have recently turned to low carb. Not fanantically but cutting out bread pasta biscuits etc. (and it's working!)
I make my own yoghurt and have it for breakfast every day with a spoonful of oatmeal and seeds. I reckon that it costs about 75p to produce a tub of about 900g (59p for a litre of milk and the rest for a couple of tablespoons of the last batch, plus the mixed seeds and oatmeal) a lot cheaper than the bought versions.
I also make batches of soup from whatever veg I have available, including bits from the bottom of the salad drawer and washed peelings. Frozen in portions they make an excellent filler for lunch.
Just a learner so hoping that more ideas will be added.
