Menu Planning Help - Christmas Day

Im hoping to get some advice / feedback on my menu for christmas day.
Some background - Im catering for 10 people which includes 1 person who doesnt eat any carbs, 1 six year old, 3 teens and its going to be a casual all day grazing event pool side (it will be 38 degrees in Oz). Its our 4th christmas in Oz, we've tried both tradtional Aussie chirstmas and what we are normally used to, this year we have family from the UK visiting so i want to do a little of both whilst trying out a couple of new recipes too.
Starter - a mini selection of
HM chicken liver pate, garlic & chilli prawns, scallops served with black pudding and also scallops served with chorizo.
Main - a mix of a hot and cold buffet type set-up
A cooked ham, turkey crown, mixed salads, roasted veg, pigs in blankets
Pudding - this is my main PAIN area as I really want to try and make two new pudding as well as serve an old favourite. Do you think its possible to make 3 mini versions of these and serve them in a way that would look cute?
1. chocolate souffle
2. sticky date pudding
2. brandy snap basket served with cold custard, HM ice cream and mixed berry couils (SP?)
Any feed back would be great as im over planning this event - i really want it to be perfect.
Any help would be great

It sounds really lovely, and i am so jealous of your poolside Christmas!!
You say that you want it to be an all day grazing event, so the only thing i would say is to be careful with the fish and meat in the hot weather ( i am sure you know this, but i have visions of a buffet table in the sun..eek!!).0
