I made veg samosas a few weeks ago to take into work on my birthday, made them the night before and took them into work cold the next day. As Owain says, they weren't crispy the next day but they still went down a storm! You could always make the pastry, cook the filling and make them into samosas the night before, then fry them the following day when you need them - I think that would work? The actual cooking of them is the easy part, it's rolling the pastry, cutting the pastry, filling the pastry and shaping them that I find a complete faff! :o
