I've been having a look at the website of the company mentioned by the OP. I would be very surprised indeed if they are not dealing with the "self employed" aspect in a legal way.
I agree it may be possible to argue that this is not redundancy but in fact unfair dismissal but that would very likely kiss goodbye to any future work on the new arrangement.
It is a difficult one to assess, the legal position is only one factor.
In the unlikely event that HMRC held the employment status to be wrong it is the "employer" they would go after, not the (self) employee.0
