Gluten free pastry...

Seems to be a bit of a struggle to get a 'good' recipe, that doesn't use weird flours and ingredients. I had a poke around on the internet last night, and found a couple I might try out today, but I was wondering if any of the most knowledgeable bunch of people I know (that's YOU OSers!!!) had a fail safe reasonably robust GF pastry recipe that I could make pasties out of?

I did see Phil Vickery on This Morning making Gluten free recipes this week, not sure if there was pastry on it, but im sure he'll have a website, sorry i can't help you more

I can recommend Doves Farm plain flour. I get mine from T3sco. Use butter, not margarine, as it has a higher fat content and will help stick the pastry together. I have found Xanthan gum makes the pastry hard, so would avoid that. I bind my pastry with a beaten egg too.

So my recipe is

8 oz Doves Farm plain flour
4 oz organic butter
1 organic egg
adding salt or a tablespoon of sugar for savoury or sweet pastry.

katie gf pastry can be a bit hard to handle too so try rolling it between greaseproof paper I learnt the hard way
