My freezer is broken and all my food has started to defrost!

Options
So i'm slowly cooking it up, i'm ok for most things i'm just cooking what we normally eat and freezing it in portions, but i need a few ideas

first off a fresh whole salmon and makeral

and second a whole bag of spinage now we only eat this in quiche so unsure what to do with it i might just bin it.

    Or, if not together, I use spinach in a pasta recipe. Juice a couple of lemons, add 2 tsp sugar, add2 handfuls of parmesan & stir. meanwhile, chop an onion finely & fry slowly in butter until soft. Add 1 or 2 cloves of garlic & 1/4 to 1/2 tsp dried chilli flakes. add 1/2 tsp salt & cook for a couple of mins to soften garlic taste. Add in the spinach (I usually use 3 nuggets ready chopped frozen) & stir all of this through enough cooked pasta for 2 people

    you don't have to use the mozzarella & you can substitute onions for leeks


    can you make the mackeral into a pate/dip? either mix with can of drained butterbeans & tablespoon of mayo or mix fish with cream cheese.

    i'm not making anything like pasta i'm trying to i can freeze again, we had some easy food like burgers and fishfingers which i would like to use up today and tomorrow (i know bad mummy but it's not everyday i'd give them stuff like this 2 days a row) do you think that would be ok to freeze? the spinage is frozen/half defrosted aswell so abit soggy.


    Another one if i have those uncooked sausage rolls you buy and cook in the oven, if i cooked them would they be ok to freeze?


    So far i've cooked- and theres 5 of us

    About 10 dinners worth of savory mince
    3 dinners worth of sausage casarole, will be making more but i ran out of casarole dishes
    8 dinners worth of chicken casarole


    For now i'm sticking with casarole type things as i know they reheat well and i can turn them into pies ect later if i want.

    Next on the plan is more sausage casarole and some chicken curry then i'll see whta else is left.

    ah i see, thought it had gone kaput for good !

    how about a spinach & chicken curry - that could be easily frozen & reheated


    oo, and how about fishcakes with the mackerel?

    Poach the salmon and bake the mackerel, then freeze them down again.

    I would just refreeze the spinach, but if you want to be safe you could cook up with some onions and garlic and freeze in portions?

    If you've run out of dishes, try putting food in freezer bags inside the dish, then you can take them out when frozen and reuse the dishes, some of the casseroles or bakes will be fine overnight in the fridge whilst you wait for the others to freeze.

    The first thing that springs to my mind when someone mentions spinach is Indian food. How about using the spinach to make Saag? Or Saag Aloo? Or my personal favourite, Sophie Dahl's Dhal recipe that uses sweet potato. (I make it with commercial garam marsala and regular rice, not the lemon rice from the recipe.)

    If you fancy something that isn't Indian and you have about 2 inches of chorizo, I make a Chickpea and Chorizo Stew that freezes well.

    Another thought, which would use the salmon as well, is salmon and spinach parcels. (There's a fancier name, but my brain's gone blank.) Drain the spinach well. Make a really thick white sauce and add a small, finally chopped onion and the spinach to it. Season well. Add cheese to it, if you fancy. Meanwhile, roll out some pastry into rounds. On each round, spread out a thick layer of the sauce and place a salmon fillet over the top, then seal the pastry parcel. Glaze with a beaten egg and bake for 20 minutes or so at 200C.

    Thank you for all your suggestion i think i'll just cook the fish and freeze it cooked again.

    Does anyone know about the sausage rolls?

    I'd say as i get further down i'll be back for more suggestion.


    And it has completely broken but we were on the ball and went to a local shop to collect one, it's already stood for 4 hrs been plugged in and is freezing up nicely just waiting on the things i cooked earlier to cool then i'll start filling the new one, the old ones still got food in it some of which is still slightly frozen.So i have a few hrs to decide what to make.

    Sausage rolls will be OK if you cook them and then freeze them - they won't be as cricpy, unless you reheat them in the oven tho ;)

    Best thing you can do with sausage rolls is cook them and eat the whole lot, while they are still warm......

    But yes.... they're absolutely fine if you cook them then freeze them.

    Personally ...... I'd have a HUGE bowl of them on my lap and dip into them like it was a bag of sweeties :)
