Curry

Options
Last night we decided to have a treat and went to the takeaway, cost a fortune! I've decided I need to learn to cook curry from scratch and what better place to ask for recipes than on the oldstyle board?

We are basically meat eaters in this house and trying to get a chickpea or lentil past my kids lips is a huge ordeal. Anything which is essentially a chicken curry would be really useful if anyone can help.

    I'm a child of Indian restaurant owners and always more than happy to blabber on about food to anyone even slightly willing to listen (and even when they're not ;))
    Can you give me a rough idea of your favourites (and if you're thinking low fat) and I can tell you roughly how we'd cook it?

    Also,use the Oriental Supermarkets as you can get stuff like Nann breads,Samosa's,Pappads & chutneys for a fraction of the cost of getting them from the usual supermarkets.For example,I get a pack of TWENTY FIVE pappads/poppadums for 60p from the one I go to.And these are the proper ones,made in India & used BY the take aways.

    the takeaway secret recipe book has some pretty good curry recipes in it. Thats the main reason I can now cook (& eat!) curry. OH says it tastes like takeaway curry but better...

    I made a veg curry tonight which was delicious. I par boil potatoes and par boil some carrot

    In a frying pan I chuck in a lot of oil with some garlic, onion, chilli powder, turmeric, garam masala and curry powder (about a teaspoon of each). I then add green pepper and then the carrots, chopped chilli (usually a few small pieces and i add more later if i need to) and some frozen peas. Once that's cooked for about five minutes, I add about a pint of stock and some potatoes. I then cook it for as long a it takes for it to taste nice and for the potatoes and carrots to go soft.

    I find it really tasty and it's so cheap to make too which always makes me happy!
  • I love 'The Takeaway Secret', also I bought another paperback at the same time called 'An Indian housewife's recipe book' by Laxmi Khurana and I've made about 12 of her recipes, they're so good and straightforward to make. When we set aside a Saturday afternoon to make several dishes for our curryfest that night, we always make about triple to amount we need, and freeze the rest. That way, you can make a curry from scratch the following week (again, freeze 2/3s of it) and take out a couple of frozen portions of other dishes to complete the meal. That way you only cook 1 dish from fresh and always have a few 'onhand'. We make our own paneer, nans and chapattis and it's so tasty and so much cheaper!
