Chinese Flavouring Sauces for Stir-Fries
Tomato Fireworks Sauce
This is an excellent all-purpose sauce for a stir-fry.
Makes enough for a stir-fry to serve 4- 2 tablespoons dry sherry
- 3 tablespoons tomato sauce
- 1 tablespoon oyster sauce
- 1 tablespoon soy sauce
- 1/2 teaspoon granulated sugar
- 1 teaspoon sesame oil
Sweet and Sour Sauce
This is an excellent all-purpose stir-fry sauce.
Makes enough for a stir-fry to serve 4- 1/4 cup red wine vinegar
- 1/4 cup sugar
- 2 tablespoons tomato sauce
- 2 tablespoons pineapple juice
- 1/4 teaspoon table salt
Mix together in a small bowl.
Black Bean Sauce
Here is a classic stir-fry sauce.
Enough for a stir-fry that serves four- 1 tablespoon chopped Chinese fermented black beans (rinsed)
- 2 teaspoons minced fresh ginger
- 1 tablespoon minced garlic
- 3 tablespoons dry sherry
- 2 tablespoons chicken stock
- 1 tablespoon soy sauce
- 1/2 teaspoon sugar
- 1 tablespoon sesame oil
- 1/4 teaspoon ground black pepper
Mix together in a small bowl.
Lemon Sauce
- 1 large lemon - Zest and juice
- 1 teaspoon granulated sugar
- 2 tablespoons low-sodium chicken broth
- 1 tablespoon soy sauce , light style if available
- Pinch table salt
Curry Sauce
- 3 tablespoons soy sauce
- 1/2 teaspoon granulated sugar
- 1 tablespoon dry sherry
- 2 teaspoons curry powder
- 2 spring onion, finely chopped
- 2 tablespoons chicken stock, or water
