Thanks OH cooked it. Don't really weigh stuff so all weights are approx. and is for four people. Can use chicken thighs instead, add chorizo and garlic but I don't like them!
1 x large onion finely chopped
5 x tomatoes thinly sliced (remove stalk)
1 x red pepper finely chopped
1 x green pepper finely chopped
1 x cup of frozen peas (about 200gr)
2 x chicken breasts chopped into small pieces
375g Paella rice
200gr small peeled prawns
200gr peeled king prawns
2 x prepared squid thinly sliced
1tsp of turmeric or a pinch of saffron if you have it
Large and small prawns with the shells on for decoration (we use 8 large/16 small)
Mussels in the shells for decoration (usually get a kilo as DS likes to eat a bowl of them first)
Lemon cut into quarters
Small amount of oil for frying approx a couple of tbsp
Approx 1lt of chicken stock (2 x cubes)
Crusty bread
Side salad if required
Cooking time approx 50 minutes.
Put oil into Paella pan/large frying/saute pan and cook the chicken on a low heat. When cooked, use a slotted spoon to remove the chicken and keep until required.
Saute off the onions in the oil on a low heat until transparent. Drain off any surplus oil and add the tomatoes, peppers and peas. Stir for approx 5 minutes, add the stock, rice and turmeric. Bring to boil and then turn down to simmer for approx 30 minutes.
Wash the mussels. Put a pan of water on to boil and then add the mussels. Simmer for approx 5 minutes. Remove from heat.
Add the chicken and squid to the Paella. Approx 5 minutes later, add the peeled prawns.
Add a little water if the stock is absorbed - it has to stay moist.
Arrange the shell on prawns around the dish. Turn them over after a couple of minutes.
Add some of the cooked mussels and allow to warm through - just a few minutes.
Arrange the lemon pieces around the dish.
Put the pan onto the table and let people serve themselves.

this glitching malarky is really not doing me any favours......
OH has just come in from work, goes straight to fridge and takes out ambrosia rice and states when you going to A again this is the last one. as the last time i've been in a shop before this glitch was 23.12.11 i think he has a cheek to now start expecting me to shop, he was told in no uncertain terms that once the glitch is over it's back to the way things were!
oh.....and the first time he has ever had a rice pot was when the glitch startedIt's the thought that counts.......I think a lot!0 -
