What to add to cold rice for packed lunch ?

Hi All

I have some left over white boiled rice that I would like to take to work for my lunch tomorrow but I'm struggling for ideas for something to go with it ?
I do sometimes add cooked chicken, mushrooms, onions and black pepper to it which is tasty but a little dry. I wonder if anyone has ideas of something more moist to go with the rice? I prefer to eat the rice cold so would be nice just to throw something else in or dish it up with something that I can easily take to work. Don't have a food flask or anything, just use a tupperware tub for my rice.

    What about a rice salad? You can use almost anything. I generally make it with spring onions, sweetcorn, red pepper, finely shredded spinach, some parsley and a vinagrette dressing.

    i like peppers sweetcorn mushrooms and sultanas strange mix but tastes lovely really

    chilli sauce & pineapple (with juice) for a base, then lob in whatever else you want.
    TOP MONEYSAVING TIP

    Make your own Pot Noodles using a flower pot, sawdust and some old shoe laces. Pour in boiling water, stir then allow to stand for two minutes before taking one mouthful, and throwing away. Just like the real thing!

    Some cooked mixed veg, prawns or chopped chicken or ham and mayonaise. I also enjoy taking cold egg fried rice for lunch.

    Take a chicken or vegetable stock cube to work with you and if you have a kettle there just make stock with boiled water and add the rice etc.

    Add mayo, chopped apple, walnuts and raisins for waldorf salad or add chicken, sliced almonds, mayo, curry powder and raisins for Coronation rice salad.
    I post occassionaly but I don't think people appreciate my flirting or humour on here! :o
