Can employer do this?

Daughter and colleagues all hae signed contracts. Employer deducts wages for till shortages and property missing (restaurant).

This is not in their contract.
Staff are now querying it and the employer has sent a piece of paper with details of making payments and asking all staff to sign this one piece of paper.

Can they be made to sign or should a new contract be made up and signed.
Some of them have been working there a long time and been paying along time.

Can the employer do this - yes, however this may amount to an unlawful deduction.
The staff need to raise it asap and potentially go to grievence to bring a stop to the practice, then there is the refund of deductions already made to consider.
