I don't have a recipe at all, just an easy method that works for me:
First things first, put a saucer or plate in the fridge, you will need it for testing the set of the jam later.....
1)Put fruit of choice in a pan (preferably foraged or whoopsied)
2)BARELY cover with water and stew til soft.

If you want a jelly, you strain the fruit in a tea towel inside a colander over a pan overnight. You just use the juice .

If you want a jam, don't bother straining.
4)Then measure either juice for jelly or fruit and juice for jam.
5)For each pint you need a pound of sugar and a good glug of lemon juice (I use nearly half a bottle).
(If you have fresh lemons, all the better. Use the zest and juice.)
6)Boil rapidly until you reach setting point. Keep an eye on it and stir regularly.
7)Setting point is reached when you put a drop on the cold saucer and it forms a skin after a wee while (it will wrinkle when you push it with your nail).
8)Then put into hot sterile jars quickly and lid them. Leave undisturbed as they cool. They should form a vacuum as they cool and self seal.
I've now started using a water bath but this is not necessary for a beginner, especially if you are intending to gift or consume them within a few months.

I have committed a school boy error this evening that I wasn't aware of.
Headed back to to do a cereal shop with a £10.18p voucher..Went and used the self service checkout to pay and had to wait for the lady to get her SA to come authorise my transaction. I waited about 5 min' then the SA came over and he informed me that "This voucher isn't valid until 6am the following morning" I replied with "sorry I had no Idea" He cancelled the whole order for me and off I went with my tail between my legs.
Yesterday I did about 3 shops and used the vouchers that very day. Looks like today has been an unlucky visit for me.
So do you all wait at least 2hrs before you try to redeem your voucher(s)??0 -
Bother, fluffed 3kg of iams through picking wrong 120g pots, custard def not working! Pleased with smaller APG tho as slight surprise on face of younger SA today for my £28.xx :eek::eek:
