Mexican Burrito Recipe ?

Hi all,

Got mexican burritos on the menu tonight and wondered if any of you have a good recipe you use?

Intending on using flour tortillas and filling with lettuce, vegetable rice, mixed beans in chilli sauce, sour cream, guacamole and a spiced mince.

So, any ideas what spices should be in the minced beef? I could use my fajita spice mix but it doesn't feel like it would be right...

Also, anyone have a spicy fries recipe?

  • I always dry fry mince then add a packet of chilli con carne mix (aldi 25p) I know its cheating but its delicious x

  • I add paprika, oregano, (big pinches shakes) chilli powder, chilli flakes, cumin (small pinches or to taste). Ground corriander big pinch, or if you can stretch to it fresh corriander a big bunch. IMO fresh corriander and fresh guac makes it.

    I put in a tin of toms, veg and beans but unless you cook for abt 40mins this is a bit sloppy for wraps.

    You can get micro mexican rice in home bargains for 50p, uncle bens do a version too, this would add loads of flavour but is a bit of a cheat. Makes it more like a takeaway tho.

    I normally dry fry my mince and add a finely shooped onion and finely chopped green pepper. Mix in chilli flakes, chilli power and paprika. I do cheat and use packet mexican rice because i cant cook rice :o pile it all onto a tortilla, sprinkle with cheese, beans, sour cream and salsa oh and jalapinios - yum!!!

    I can't find a thread for mexican recipes. I was thinking I would like to try some different meals in 2013 and would really like to try some mexican. Any suggestions?

    We eat alot of mexican food in this house, other half is American, i'll type up a few in the morning, i'm struggling to keep my eyes open tonight xx

  • The best burrito I ever had was one which had rice with kidney beans mixed through in it - delish!

    For spicy fried/wedges I would toss the potatoes in a little oil/spray with a touch of frylite and then toss in fajita mix or a similar spice blend (my parents got me a bag of 'mexican spice mix' once but I have no idea where from I'm afraid) then cook in the oven. Alternatively you can get a mexican spiced spray oil that would work well too called sizzle spray or something like that

    I will share the only mexican recipe I do have, which is for quesadilas.

    You heat up a dry frying pan and grate some cheese, slice avocado and maybe chilli and/ or tomato or tomato salsa. You can also use cooked chicken. Put the tortilla in, fill it with the filling and fold it over. You then turn it when it seems toasted and cook the other side and serve with sour cream or left over dips.

    This may be more mexican style than mexican, but it's quick and tasty and works with slightly stale tortillas which may be left over.
