Baked goodies with a longer shelf life?

OH loves my baking, and having packed him off with some gingerbread biscuits for his 3-day work trip this week, I had the idea to make him a little surprise package for his longer trip next month (3 weeks, all the way up in Scotland)
I'm assuming they'll be fine for him to transport in his suitcase on the flight up, otherwise that may scupper my plan altogether!
Can anyone recommend recipes for baked goods that will last a while? He may have access to a fridge and freezer but not 100% sure. I know gingerbread is good for a while, but recommendations for other things that will keep in sealed bags or plastic containers would be fab, not sure how long the brownies he loves would last as I tend to freeze in slices to microwave when needed. He's not overly fussy so will probably eat most things

Chocolate refrigerator cake (which doesn't need refrigerating) lasts a good 10 days. Not really baking, but definitely a treat. Fruit cake would last the whole 3 weeks if it was well-fruited.0

Thanks. I made some rocky road squares the other day which went down well, so refridgerator cake could definitely be a hit.0
