can someone help me with chutney quantities?

Can anyone help me with a chutney recipe, I've been kindly given 550g of plums which need using asap, I have a few chilli's knocking around in the fridge & some onions & a bottle of malt vinegar, I think I have some brown sugar too (though it may be soft brown) can I make a chutney from this? I am unsure about quantities/ratios - will I need to buy any other things to add to it???

I spied a recipe somewhere for a plum & chilli jam but didn't have enough plums

  • My mums microwave plum chutney recipe.... (tried and tested by me, yum yum) Just halve the recipe if you don't have enough plums.

    700g plums
    225g onions finely chopped
    450g cooking apples
    300ml cider vinegar
    Piece of root ginger (I used ground)
    1 teaspoon of: whole cloves, all-spice, peppercorns
    225g soft brown sugar
    1 teaspoon salt.

    Roughly chop plums and remove stones, put to one side
    Cook onions on full power for 3 mins and stir half way through
    Peel, core and chop apples, put with plums, cook full power for 6 mins or till tender
    Tie cloves and peppercorns into muslin bag
    Put spices, spice bag, vinegar and sugar in another bowl and cook for 5 mins, let the sugar dissolve and put to one side to infuse for 30mins
    Put all ingredients together (except spice bag) and cook on full power for 20mins or until chutney is thickened up, stir every few mins.

    Pop into your jars and leave for 4 weeks.

    *** make sure your kitchen door is closed and the windows open when you're making this, and have a scented candle ready at the end, that vinegar is powerful!! ***
