This time yesterday I was asking for help in finding sumac. Now I am wanting ideas for using it up!!!! I have the packet I ordered from E-bay on it's way and 2 tubs my DD found for me this afternoon in a little multi-cultural grocers near where she works! At this rate it will be a sumac recipe at every meal! I have gone from one extreme to the other!"If you dream alone it will remain just a dream. But if we all dream together it will become reality"0

Seems to be a good spice to use http://www.squidoo.com/what-is-sumac
Some ideas of uses:
meat rub/marinade for kebabs/ roasts (chicken and Lamb) also fish and seafood
in salads instead of using lemon juice
in lentil and rice dishes
in soups, stews and casseroles
in pies/pastries
plate garnish - ontop of hummus, had in in a restaurant where the calamari was plated on lettuce that had been sprinkle with the spice.
on roasted vegetables like potato and eggplant
seasoning on crisps/chips/fries
lemonade, jam and jelly (but I think you can only make with fresh berries)
season flatbread?
seasoning on a fried egg
I think you can use in some desserts or yogurts but not sure.0 -

Most Lebanese and Iraqi recipes, especially kebab recipes, use a LOT of sumac; with many of them using 2 heaped tablespoons or more in one recipe. Also Assyrian recipes use sumac really heavily; as they are a really ancient people who are still going strong, and they didn't have all the spices we have available now I've seen a couple of their recipes in Arto der haroutunian books xx0 -
Thanks freezspirit and dasophster for your ideas. I don't know why I haven't come across it before as it seems to have a multitude of uses. I have visited Egypt and Turkey many times in the past so have probably eaten it in meals lots of times and not known what it was! I was looking at a Lebanese recipe site last night to get ideas, some sound delicious. I'm sure my three jars will soon get used up! Thanks again."If you dream alone it will remain just a dream. While we are looking for stockists does anyone know any stockists for Aniseed - the seeds that is, for a sicilian recipe cake. Tried an Asian supermarket but no good, they only had fennel seeds. Online the postage is ridiculous.
hi, just joined , i am from Sicily and we do use the fennel seeds but from wild fennel which is more stronger than the on in the shops which comes mostly from the florence fennel
will be harvest time soon ........0
