    An American friend served us green velvet cupcakes as part of a St Patrick's day meal .Same as red velvet but with green food colouring.

    They were nice but not something that I would bother making myself.

    in essence it is just a red coloured chocolate cake, but the texture of red velvet is different to a normal sponge mix. its more open and fluffy, due to the bicarb/vinegar mix that froths up (yes, the same method as alot of people use to clean their drains)

    brown vinegar is ok, but apple cider vinegar gives a better flavour

    i too love watching the Food Network. but prefer Man V Food, or Diners, Drive-in and Dives. But thats because im more a savoury type of person. But then again, could be tempted by the Key Lime Pie and Coconut pies that ive seen on there recently, the meringue toppings were just huge

  • Baking is my favourite pasttime & have baked Red Velvet cupcakes a few years ago. I remember the recipe I followed had vinegar (can't remember which one though), cocoa powder, red colouring, cream cheese frostingm, basically everything that people have mentioned above.

    Have to say, I didn't like them. The cake was nothing special, although that could be because I'm not a massive fan of chocolate flavoured desserts. The cream cheese frosting was disgusting!! Obviously this is my personal taste, others may disagree but I didn't enjoy them at all & have not made them since.

    I make red velvet cupcakes from The Hummingbird recipe book and they are lovely but saying that I have never met a cake i dont like ;). Emm Im not sure on the rules for posting recipes from books so if you would like it just pm me.
