Baking ideas that are freezeable?

We are going to Wales on Monday for a few days and to keep costs down I'm planning to bake some goodies to take with us (and to keep the kids satisfied) but as I am working nights Thursday night until Sunday morning I am wanting to spend the day tomorrow baking and freeze what I bake as I really won't feel up to baking when I've finished my nights on Sunday (plus will have final packing to do)

Can anyone recommend any good recipes that will freeze well? I'm wanting to do things like flapjack, chocolate cake, bakewell slices but I've never frozen any baking before so not sure what you can and can't freeze?

    99.% of home baking is freezable, everything that you mention is okay.

    Rock buns are really good to freeze and so easy to make.
    make the most of it, we are only here for the weekend.
    and we will never, ever return.

    I'm guessing OP just wants to extend the shelf life a bit longer. Freezing it until Monday morning will help buy a few more days even if it is all defrosted by Monday night (though packing it in a coolbox may help slow this down - I'd recommend cutting everything up and making mixed trays before you freeze it so you're not limited to eating a tray full of chocolate cake before you defrost the flapjack and then a whole tray of flapjack before you defrost the bakewell slices. Alternatively, slice and open freeze initially so you can then put in bags and grab individual slices out without worrying about them sticking to each other.

    As said, most recipes will probably freeze fine - condensation formed on some may make them look less aesthetically pleasing, and texture could be affected for some stuff (probably the more watery things) but most should be OK.

  • Could you make cookie dough and roll it up and freeze it - or just keep it in the fridge, then take it out on Sunday night, and cook?

    You could perhaps do this with some flapjack mix as well.

    I'd perhaps just concentrate on stuff that won't melt too much on a journey - instead of choc cake, go for brownies.

    Muffins freeze really well and defrost quite quickly. Every time I make a batch I freeze half and we eat half, then I always have a stash for picnics and lunchboxes.

    Scones freeze really well so do cupcakes, muffins, banana bread, fruit cake,

    I would freeze most things to be honest, if I am doing cupcakes, I freeze before putting the icing on then add it when defrosted.

  • I do a lot of baking and also freeze a lot of it,having cut it in slices first.I've never had any problems with it defrosted.

    The only things that I haven't tried freezing are cheesecake and biscuits.I'm pretty sure you can freeze biscuits though not sure about cheesecake.

    Today I'm freezing tea loaves in chunks of a few slices worth, and jam crumblies in individual pieces, for packed lunches. Lemon drizzle, banana cake and ginger cake all freeze well. As said, freeze cakes without icing on - although sugar drizzle is OK to freeze.
  • Fudge is really easy to make and can be freezed. :)
