Christmas parties

I know its early but stated to think about Christmas. We are looking at holding a party for friends and family and I would like to think about the food now so can save/make things to freeze and also it needs to be on a really tight budget.
We have sausage rolls in the freezer which we will use but what else?
I am also thinking of a buffet for a few close friends which I want to be really elegant but again on a budget.
Any ideas? Thank you x
oh and what dessert could I make to put into wine glasses so it looks yummy and posh!

I don't know if this can be frozen, but it tastes really good and is easy to make. It's a Slimming World recipe.
Put a tub of cottage cheese into a bowl. Mix in 25g of cheddar cheese, two or three eggs, and whatever veg/meat you want to add (ham, peppers, onions, etc). Pop into a flat baking dish and cook on gas mark 5 (about 15 minutes).
You could freeze pork pies, cheese and onion rolls, and bread products.
Pickled onions, beetroot, mayonnaise (some new flavoured ones are available now - check special offers in the supermarkets) - all easy to store. Try B&M, poundshops and Home Bargains for decent prices.0 -
Eton mess is fairly cheap and cheerful if you can get yellow stickered fruit (strawberries, raspberries and such like) on reduced.
Simply whip cream until soft peaks form, crush some merangues (again can get RTC from most places if they are a bit squashed - perfect for this recipe), stir in fruit and merangues (save a bit for the top) and put in glass. Always a fave in this house!
You could do chocolate mousse, mini trifle (9p custard from morrisons, little bit of sponge - packet mix about 30p, and some squirty cream if you wanted, as well as jelly which you can pick up for about 30p. Could be less than a quid without cream for all).
For 'picky bits', try hot sandwiches, mini fish & chips, or use the barbecue food bits that will soon be going on offer in most shops - some aren't summery at all and are great at buffets.0
