Being Creative with Leftovers

Once again DS came home and said he was going to his GF's for his evening meal (treats home like a hotel and he is only 15!):mad:. So I decided not to roast the chicken until tomorrow and wondered what DH and I should have instead.

In the fridge I had an aubergine, some leftover chilli beef, leftover mozzarella and hummous. I halved the aubergine lengthwise and did a couple of crisscrosses with the knife and put them in a baking dish. Spread them with a little olive oil and then the hummous and stuck them in the microwave for 5 mins. I then covered them with the chilli beef and slices of mozzarella and stuck them in the oven and baked until the aubergine was soft and squidgy. Served with salad and HM bread and they were delish. In future, this will be one of the dishes on my menu plan.

It would be great to know what other people have done/do with various leftovers to create a meal - and might give others some good ideas.

    Not really leftovers but nothing specirfic for a meal.
    4 of us got together with kids (preschoolers) at someones house today, chat got on to what's is everyone having for tea. I had no idea at this point but one girl was doing pasta bake. Since I knew I had pasta in, I thought I'd do that too.

    I boiled the pasta and meanwhile I fried a chopped extremely sad looking leek that was lurking in the fridge, chucked in some frozen sweetcorn that I semi- cooked in the microwave for a few mins, and added a tin of tuna. Whilst that lot was gently warming through I made some cheese sauce and then mixed it altogether with the pasta.

    Topped with cheese and breadcrumbs and baked for 15 mins in the oven.
    It was gorgeous. Even my vegetable-shy 4 year old ate it, leeks and all.
    We have heaps left for tea tomorrow night too (kids friends coming over) AND I put 5 toddler portions in the freezer.
    NOTE: I was about to make the breadcrumbs for the topping when I remembered my wee hand blender thingy went BANG the other week.So I had to hack at a couple of slices by hand with a kitchen knife, and amazingly the breadcrumbs produced were pretty good!!

    Gosh, I do this all the time but my mind's gone blank:doh: and I can't think of any specific examples now. But, I just wanted to say your aubergine experiment sound lovely and that these sort of meals are often the most delicious things.

    both those meals sound fab! we're greedy and therefore rarely have leftovers...how embarrassing!
