Re-training online/distance learning options?

I currently live aboard but would like to use my time out here to re-train or train in something so that when I return to the UK I will be more likely to find a job. I cannot work out here so cannot get on the job training.

I previously worked in low level IT jobs never earning more than £30k per year but am not too keen to move back into that field although it wouldn't be the end of the world if I had to.

Basically what I am looking for is a job or skill a can learn/train/gain by self study / distance learning which will give me a good chance of getting a job in a few years when I start looking again.

Any ideas of skills I can train in or places to look? I have a degree.
